Irish Soda Bread with Black Sesame and Thyme

Whenever I make any kind of Vegetable Soup or especially my favourite, Tomato Soup I just have to make a Soda Bread. Quick and easy to make, no kneading or proving required! The bicarbonate of soda and the buttermilk do all the work....

Cardamom & Saffron Brioche with a crispy Pecan topping

Nothing says Sunday morning better than a slice of  Brioche topped with butter and maybe a little jam. Accompanied by a strong cup of coffee or a steaming cup of tea. This really is weekend indulgence for me.With no rush to get out the door to catch the school bus or head to work this flavoursome sweet bread can be enjoyed slowly and ...well, generously...

Warm Pear Frangipane Tart & Chocolate Fudge Sauce

I would like to share one of my all time favourite combinations ... Almond paste, pears and chocolate preferably warm but cold is fine too!

For this I make the Almond Paste first and continue with a pastry shell before I assemble the Tart.....

Serve a slice of pear tart with Hot Chocolate Fudge Sauce and a quill of Chantilly cream.....mmmmhhmm heaven!

Quick roulade recipe with fresh Strawberries & Mascarpone Lemon cream

This roulade recipe is the quickest roulade recipe I know and has been used by my grandmother before me and probably by her mother before her.

Usually it would just be filled with some strawberry jam and dusted with icing sugar, which would make the whole thing even quicker and is absolutely adored by all small children!!

It’s also nice filled with fresh cream and fresh fruit in the summer but extra special filled with Mascarpone Lemon Cream…..
