Coronation Chicken – a Quick way or the Queens way





I find this a particular great way to use up any leftover chicken from a roast made at the weekend but it’s obviously just as delicious made with fresh chicken breast. Or if you are a Vegetarian, it works really well with Quorn chicken style pieces. 

Coronation Chicken is a delicious sandwich filler or fabulous served on a hot baked potato.
I enjoy it most with some salad leaves and sliced cucumbers served in a pitta bread or flat bread topped with extra mango chutney and toasted almonds.

Quick roulade recipe with fresh Strawberries & Mascarpone Lemon cream


This roulade recipe is the quickest roulade recipe I know and has been used by my grandmother before me and probably by her mother before her.

Usually it would just be filled with some strawberry jam and dusted with icing sugar, which would make the whole thing even quicker and is absolutely adored by all small children!!

It’s also nice filled with fresh cream and fresh fruit in the summer but extra special filled with Mascarpone Lemon Cream…..

Crochet Baby Blanket with felt motive


This is my first baby related post and I am so excited. I am now 21 weeks pregnant and finally feeling better and happy to share my news.
During the first few months I have kept myself busy but I just didn’t find enough additional strength to write any posts.
Anyway this is the first baby blanket I made. At the time I made it I didn’t know the baby’s gender and so I tried to keep it as neutral as possible but I wanted it to be as colourful as possible. Obviously you could change the colours to pinks or blues if you wanted to.

Yellow Haddock, New Potatoes and Peas


This is one of my husbands child hood food memories. Fresh poached smoked haddock, served with new potatoes and peas. How very English!?!
