Spelt Flour Flat Bread and Toppings

This is one of my favourite quick dinner recipes. Also great for hot summer days.... Seasoned freshly baked flat bread topped with whatever is in the fridge. For me a vegetarian topping for my husband it has to be meat and for Leia, well she makes her own crazy topping up...




I make the bread with part white strong bread flour and spelt flour. It really gives the bread a rustic flavour and it has a lot of nutritional benefits.



For the flatbread (makes 3)
200g spelt flour
175g white flour
7g fast acting yeast
1tsp sugar
1tsp salt
2tbsp olive oil
225ml warm water


Place all dry ingredients in a large bowl, add olive oil and water and bring together into a ball of dough. Knead of a few minutes until smooth. Divide into 3 smaller balls and pull into an oblong shape. Prick several times with a fork and brush with olive oil and sprinkle with sea salt.

If desired top with herbs and/or onions.


Bake at C for 20 minutes until golden brown.




Different topping ideas



Edam Bean spread
Courgette Ribbons
Creme Fresh
Grated Cheese
Boiled Egg
Capers

For the courgette ribbons I "peel" a courgette with a potato peeler and place in a saucepan with 1tsp of butter, pinch of sea salt and a squeeze of lemon juice. Stir on high heat for 2-3 minutes.

Wilted Spinach
Cherry Tomatoes
Celery salt flavoured Ricotta Cheese
Capers
Boiled Egg
To wilt the spinach place in a saucepan and lid. Heat to medium heat, stir frequently until all the leaves are wilted. Drain excess liquid and sprinkle with Sea Salt.
