During the long winter months we crave for Mr. Whippy's ice cream van to come whizzing round the corner playing his little tune to announce his arrival.
As Leia pointed out last weekend (with a VERY sad face) it will be a few months yet before she can have a Mr. Whippy Ice cream. So I set out to make this little sad face a little happier.....

While I was searching the net for a Mr Whippy Ice cream I even came across some clothes inspired by the strawberry and vanilla ice cream....
For the cupcakes
175g softened butter
175 g goldencaster sugar
3 eggs
200 g self-raising flour
1 tbsp cocoa powder
1 tbsp cocoa powder
3 tbsp natural yogurt
1/2 tsp vanilla extract
Preheat the oven to 180C Line a muffin tin with 12 paper muffin cases
Cream together butter and sugar in a large bowl until light and creamy.
Whisk in the beaten eggs a little at a time.
Lightly fold in the flour with a large metal spoon, about a third at a time.
Next, fold in the yogurt and vanilla to make a soft dropping consistency. Divide the mixture between the paper cases then bake for 20-25 minutes
For the meringue frosting
3 egg whites
80 g caster sugar
200g softened butter
200g softened butter
pink food colouring
Whisk the egg whites until stiff.
Meanwhile, bring 5 tablespoons of water and sugar in a pan to 118-120C. While continuing to whisk the eggs slowly drizzle the sugar and keep beating until the meringue cools down.
Beat the butter into the meringue.
Divide the mixture into two bowls. Add a few drops of pink food colouring to one of the bowls, mix until well combined.
Fill one side of a piping bag with pink frosting and the other with neutral frosting.
Pipe the mixture onto the cakes.
I added a little edible pink glitter for the little sad face!!

Yum! I love Mr Whippy ice cream! We don't have an ice cream man here but I live 5 minutes from the beach so in the summer I walk to the refreshment hut and get ice creams from there, yum!
